Exotic champagne cocktails meet apricot yoghurt and pineapple juice. A few white stone fruits such as lychee, a ripe gooseberry or two and hints of petrol jelly and white wildflowers. Crushed bracken, tart brambles, a hint of hardwood sawdust and sweet lime jelly. With water out comes white madeira, olive oil, caraway and cherry blossom. Along with a stray peach stone and a slice of victoria sponge. The taste in surprisingly minty fresh and floral - like herbal mouthwash and after eight mints. A touch of clove oil, some eucalyptus resins, chewing tobacco and spicy paprika. hints peach puree and Turkish delight. Reduction brings out a gentle, tongue-hugging spice, coal dust and mirabelle eau de vie.
