Reverberating bass notes

Highland, Southern

The nose crooned sweet songs of golden syrup, spun sugar, maple candies and Victoria cream sponge; with an understated bass harmony of hickory wood, polished furniture, walnut oil and Victory Vs. On the palate, that harmony swelled to a rafter-raising crescendo of charred oak, pickled ginger, coriander, liquorice root, chewing tobacco and leather; its sweetness (white chocolate, honey, molasses cake, barley sugars) seemed more subdued. The reduced nose discovered Sauternes, brandy-macerated plums and fruits of the forest jam. The palate now conveyed cherry chocolates, Christmas cake and sticky toffee pudding with a woody finish of pink peppercorns and chewed pencil ends.
