The nose indicated vanilla smoke, fresh tar and maple pecan Danish (one panellist imagined eating shrimps with a neoprene glove in a cowshed!). The palate encountered even-handed smoke and punchy sweetness (vanilla custard slice, Eccles cakes); then a deeper, tongue-nipping finish of stubbed out cigar butts and brush strokes of ash and tar. On the reduced nose, clotted cream and chalky sweets were slapped on a wooden table and rosemary sprigs were chucked on a log fire. The reduced palate found liquorice, custard tarts, herbal sweetness, black bun in a bothy and soul-soothing smoke – an entertaining, rather rustic experience.
