The aroma sent us on different journeys. One Panellist walked down a cobbled street at night in Victorian times when street lighting was fuelled by whale oil, while another stood enjoying the panoramic views from Dun I (‘hill of Iona’ in Gaelic), the highest point on the island. On the palate we were back in the Victorian era, now in a cigarette smoke-filled pub ordering a porter beer served in a pewter tankard. A drop of water and it felt as if we had emerged from hibernation. Spring had sprung and the taste was sweet, like the first rays of sunshine warming the still cool, salty sea breeze as we spotted in the distance the island of Staffa.
