The Panel was greeted by a rich caramel sauce next to freshly made tablet (crumbly, buttery fudge) and profiteroles in a hot chocolate sauce. The neat palate gave us a lot of sweetness up front in the form of orange jelly and amaretto cream pie. This was soon followed by cardamom and mint-infused pineapple, mango and melon. The addition of water released a warming wood spice aroma which mingled well with the sweet notes of berries in clotted cream. To taste, we tucked into a cinnamon coffee cake muffin, washed down with a mug of burdock root tea. Following eight years in an ex-bourbon barrel, we transferred this whisky into a second fill heavy toast medium char chinkapin oak barrel.
