Calm, discreet and harmonious are not necessarily attributes which normally come to mind nosing a sample from this distillery – but here we have it! A truly show-stopping creamy syllabub that combined sharp lemon juice with fragrant aromas of rosemary. What a difference on the palate neat; ashy, seriously sooty and sweet, tarry with a crescendo of chilli. When we added water, the aroma had plenty of sweet cigar ash, as well as sweet smoked paprika, while to taste we chilled with a glass of refreshing, silky and creamy grilled lemon limeade with just a gentle sweet peat flavour lingering in the aftertaste.
