We initially stepped into a florist with an array of fresh-cut flowers next to azaleas and gardenias in small decorative pots, but we also discovered candied ginger, raisins and orange peel. Spicy and hot on the palate neat like baked apples with mincemeat, mixed spice and honey. With water we imagined walking through an autumn forest, damp leaves, mushrooms and a basket full of blackberries. On the taste we delighted in a rich chestnut meringue with hazelnut liqueur cream. After 13 years in an ex-bourbon hogshead, we transferred this whisky directly into a 2nd fill Oloroso butt for the remainder of its maturation.
