Think of plums, cherries, figs, cinnamon and cloves, add a hint of tobacco and leather as well as vanilla and coconut which seemed to be lurking in the background and you should get a vague idea of the complexity. A fruity, muscular flavour on the palate neat, some spice but beautifully balanced with sweetness like a Swiss speciality from Basel called Laeckerli and this version is ‘au chocolat noir’. A tiny drop of water revealed a delicate toasted and balsamic scent before we enjoyed fresh grilled amberjack fillets in a pineapple and mango salsa. After twenty-six years in an ex-bourbon hogshead, we transferred this whisky into a 1st fill shaved toasted and re-charred American oak Oloroso seasoned barrique.
