“Rich and hearty”, “ploughing a field with horses” and “warming you on a freezing cold winter’s day” were just some of the comments nosing neat. On the palate we found great texture, warm and sweet with a hint of meat, like a warmed-up bowl of spaghetti bolognese the day after you cooked it. Be careful when you add water. The aroma was now very autumnal, transporting us to a truffle hunt, with mushroom foraging and picking blueberries. The taste took us back to the spaghetti bolognese, but now the hidden stars of the dish shone, as carrots, celery, onions and the perfect mix of spices and herbs came to the fore. Following 11 years in an ex-bourbon hogshead, we transferred this whisky into a first fill PX ex-bodega barrique.
