A complex blend of hazelnuts, walnuts and marzipan joined madeira cake and vanilla sponge while the sweet fragrance of bergamot, roses and carnations merged with new leather boots and cherry jam. The palate was big and spicy, with ginger, cinnamon and white peppercorns alongside figs, dates and raisins combining with pencil shavings and peanut satay. With water came drier aromas of porcini mushrooms, oak bark and autumn leaves, while the spice of nutmeg, cloves and mace lingered aside chocolate cake. Heavy flavours of coffee liqueur, chocolate-coated brazil nuts and old leather now mixed with the nuttiness of oloroso sherry and caramelised pears. Five years in an ex-oloroso butt before being transferred to a heavily toasted refill puncheon.
