Islay

A delicate sweet smoke like that of grilled scallops with a marinade consisting of honey, garlic and Spanish red sweet smoked peppers giving that air of luxury, refinement, harmony and pure timelessness. On the palate simply out of this world, “exotical tropical”, like a smoky Bienenstich (bee-sting cake), best described as compromising of two thin layers of yeast cake with a creamy filling and a crunchy, buttery, honey-and-almond topping. The addition of water accentuated the smoke with the fresh zing of aromatic ‘Herbes de Provence’ and to taste a heavenly combination of sweet Spanish quince paste and smoky Idiazabal cheese.
