In what is now something of an annual tradition, we’ve again joined forces with our friends at Dunville’s Irish Whiskey to create this delicious small-batch release. Here, we are proud to present a beautiful triple-distilled Irish single malt matured in a combination of bourbon and oloroso sherry casks. 

The Panel found themselves rifling through a sunlit filing cabinet of aromas, including pear drops and green melon, sherry-soaked prunes, manilla envelopes and milk chocolate. Orange zest and tinned pineapple steeped in oloroso added a twist. To taste, a smooth texture carried orange liqueur-spiked coffee, more pear drops, chocolate lime and mandarin segments. This dram was bright, bittersweet and satisfyingly complex. With water, the nose turned doubly decadent: marzipan, blackcurrant pâte de fruits, dried cherries and polished leather met eucalyptus, menthol and candied walnuts, all dusted with a wee spray of furniture polish from a well-kept study. The reduced palate was exotic and fruit-forward, delivering melon and a “pineapple bananza!”, as one Panellist exclaimed. Banana bread with chocolate chips lingered, a final indulgent note from this tropical treat.
