A lemon zing on the palate was followed by freshly cut wood and grass before sweeter flavours of lemon buttercream and a mojito appeared. Following reduction we discovered typical rum characters, with the scent of sweet sugar cane juice, banana split, cream buns (a Scottish favourite) and a creamy apricot yoghurt.
