The palate had a similar effect – brown sugar sprinkled on banoffee pie, shimmerings of rum and coconut, and a finish of dusty wood and spiced sweets (ginger, aniseed, clove). The reduced nose transported us to a tropical island – cane sugar, vanilla pods, rum and gardenia blossoms – ‘a sweetly decadent perfume of paradise’.
