On the palate we had salted crisps with a chive and onion dip followed by grilled snapper in a red pepper sauce. After reduction we found bags of brown sugar; the intense sweetness avoided being cloying due to lingering background notes of leather and lightly smoky, spicy roasted almonds. To taste, a beautiful balance of rum-like sweetness and dry oak tannins.
