The fruit evolved into a darker dimension involving dried prunes, dates and figs, perhaps mixed with sultanas and raisins in a bread and butter pudding. A fresh citrus note of orange skin and bergamot combined with walnuts and brazil nuts in a warming and comforting manner. The palate helped to augment this pursuit of excellence with the addition of truffle oil and an intense herbal overtone like sticky cough syrup. Then more fruit with mandarins soaked in Cognac and the oxidised depth of oloroso sherry.
