After a little smoke, sweetness emerges with rhubarb crumble, toffees and a glazed ham seasoned with salt and lots of pepper. The taste neat is of fruity fresh chillies and black pepper with a pleasing warmth. It’s thick and sweet too, like golden syrup. Adding water reveals medicinal smoke on the nose giving way to cereals, Branston Pickle and lemon zest. Give it time and it becomes fresher, more floral and fruity like an apple fizzy drink.
