With time and a little water it became \u003cstrong\u003edusty and woody\u003c\/strong\u003e (newly sawn wood, \u003cstrong\u003eworkshop shavings\u003c\/strong\u003e, tea, hay, pepper) – but with \u003cstrong\u003eteasing sweetness\u003c\/strong\u003e (honey, chocolate, orange jelly) and \u003cstrong\u003edelicate roses\u003c\/strong\u003e. The palate flooded the mouth with flavour – \u003cstrong\u003edark cherries, dark chocolate\u003c\/strong\u003e, strawberry jam, blackberry, lemon and lime – all nicely agitated by \u003cstrong\u003etongue-tingling peppery spice\u003c\/strong\u003e. In reduction, bitter fruits see-sawed with honey, raisin and \u003cstrong\u003ecreamy custard\u003c\/strong\u003e sweetness – bringing \u003cstrong\u003ebalance and harmony\u003c\/strong\u003e.
