On the palate, a big burst of sweet-tart citrus flavours like biting into a kumquat (Cantonese for golden mandarin orange) followed by a sweet herbal syrup based on woodruff. After reduction, the apples turned sweet and red, well-polished too, before the aroma of pine sap and honeysuckle took centre stage.
