The flavours were curious but congenial – gin and tonic with lemon, passion-fruit, mango and lime sorbet and hints of grass and thyme; finishing with pencil ends, wasabi, pepper and citric peel. The reduced nose recalled a 1960’s primary school-room – wooden desks, pencil cases, blackboard, chalk, poster paints, hyacinths and hard-boiled sweets.
