The palate gave us pear drops, clean leather, ginger Edinburgh rock, lime zest, acid drops, liquorice and oak – lively but lovable, ‘like a boisterous toddler’, someone said. The reduced nose revealed beach balls and sandcastles, popcorn, meringue, peeled twigs, buttered scones and milk chews – all light-hearted, fresh and exuberant, like a day at the seaside.
