Smoke did emerge on the palate though – with crispy seaweed and \u003cstrong\u003ecrispy duck in plum sauce\u003c\/strong\u003e. We found it hot, rich and dry – \u003cstrong\u003esherry-fed fruit cake\u003c\/strong\u003e, toffee apple sticks and \u003cstrong\u003eabundant woody spices\u003c\/strong\u003e (chilli, ginger, clove, coltsfoot rock). The reduced nose had \u003cstrong\u003eapricot jam, coal sacks\u003c\/strong\u003e, sherry, chocolate, dried fruits and \u003cstrong\u003elavender-polished wood\u003c\/strong\u003e. The palate now – sweeter, milder, but still dry – suggesting \u003cstrong\u003eexotic Eastern spices\u003c\/strong\u003e and sweetmeats.
