There is a lot of smoke on the palate, much more than expected from the nose, smouldering embers, a damp garden bonfire next to crispy salt-and-pepper chicken skin chips. After reduction, an initial medicinal whiff that was soon followed by the sweet chalkiness of cocoa powder dusting. To taste, impressive in its austere simplicity, like one would find in a chilled glass of Pouilly-Fumé.
