Sweetness appeared on the palate – but it struggled among the savoury smoke and spice (Fisherman’s Friends, toffees rolled in ash, jamon Serrano, jerky, salt and vinegar crisps). The reduced nose had church candles and matches, kiln timbers, boat sheds and peat smoke drifting over an island ferry.
