The neat palate packed some playful, spicy heat – ginger, wasabi and cough lozenges – all balanced by the pleasing sweetness of plum jam, marzipan and dark honey. The reduced nose became more perfumed – lavender, sandalwood, crystallised ginger and lemon; with meringue, golden syrup and banana split completing the mix.
