The palate tasted older than its years – dried mango and Meltis newberry (jellied) fruits, olive oil cake, pecan pie and yum-yums and a salt and pepper earthiness to finish. The reduced nose held fruit gums, rich sultana cake and orange and lemon Pana cotta, agave syrup, beeswax and honeycomb.
