We found it brimming with raw seawater mixed with petrol and freshly squeezed lemon juice. Freshly shucked oysters, drifting bonfire smoke, ink and sun-warmed rock pools with drying kelp. Water brought the richness of dusty malt bins, smoky grist, rollmop herring in brine with rosemary and fragrant sandalwood. The neat palate was pure, precise and wonderfully sharp. Raw lemon juice on pickled mussels, chiselled peat, flint smoke, mineral salts and Germolene. Reduction brought out kerosene, crushed seashells, lime juice, bacon fat and wood ashes.
