The palate is a sweet\/salty\/citric combo – sweet barley, green apple, lobster claws, tequila shots, liquorice and aniseed – the finish is charred oak and smoke. The reduced nose has Atlantic breezes ruffling marram grass, sea shells, Pernod on oysters, coltsfoot rock, hospitals and candied angelica and citrus peel.
