The palate balanced penetrating smoke with Liquorice Allsorts and burnt twigs dipped in honey; it also had savoury notes of salty grilled prawns and five-spice belly pork cooked on a beach bonfire. The reduced nose evoked tarred ship's timbers, rock-pools and Cullen skink served with white wine; beach surf and wreckers; cliff-top fires conjured a scene from Poldark.
