An injured fish wrapped in bandages combined medicinal hues with coastal cues and evolved into pickled herring, gravlax and salty oysters. A puff of distant burning heather presented heavy perfumed smoke that thickened to the reek of a fishing trawler's engine room. This sweet yet dirty smoke continued through to the palate with a thick grease and treacly nature. Lighter notes of pears poached in vanilla syrup delivered a juicy expression that uncovered salted oranges and smoked rhubarb.
