Water brings forth lively kippers, burlap sack, pear soap, a slightly tarry bitterness and some pretty serious peat. To taste there are stewed apples, sugary tea, intense black coffee, chillies and white pepper. Liquorice, dandelion and burdock and Fisherman’s Friend menthol lozenges all make notable cameos. Reduction makes things ashier and bittersweet with notes of burnt seaweed, twiglets and tarte tatin.
