A little time reveals further notes of fishing nets, tarred rope, ashy minerals and a blade-like purity. Water gives up a little dry aged beef, pink peppercorns and butter. The delivery in the mouth is bold and punchy. A swish of strong mezcal, seawater and coal smoke. Also peated mead, mixed olives and barbecued whelks.
