Sweet char on the palate neat at first soon followed by sticky maple-glazed ham with baked apple sauce and a spiced (ginger, cloves, nutmeg and vanilla) rum in the finish. Water added a further dimension with perfumed tobacco smoke, roasting chestnuts and smoked rhubarb flavoured marshmallows.
