A fruity, muscular flavour on the palate neat, some spice but beautifully balanced with sweetness like a Swiss speciality from Basel called Laeckerli and this version is ‘au chocolat noir’. A tiny drop of water revealed a delicate toasted and balsamic scent before we enjoyed fresh grilled amberjack fillets in a pineapple and mango salsa.
