Apples turned to a cloudy and refreshing juice on the palate but now also with the sweet and heavily buttered pastry of apple pies with bubbles of caramelised sugar on top. With water there were more earthy notes of hay and sautéed mushrooms joining waxy fruit that had become much more tropical with hints of honey and pear jam.
