On the palate at first fresh coconut water combined with a lime and mango coulis before an extremely pleasant, creamy, spicy oak flavour started to linger at mid-palate, offering a very supple proposition. Following reduction, we sat in front of a canvas tepee on the beach smelling warm pineapple, peach and pecan muffins which we enjoyed with a tropical mango porridge.
