Herbal flavours took a medicinal influence with a sweet, barbecued stickiness like an old grill tray as fruit kebabs and chestnuts toasted in applewood smoke. A saltier temperament emerged with water, now with brine, sea air and crab meat dressed in fresh herbs. Coal dust remained on the palate but now at the harbour with lobster pots and smoked salmon.
