The palate found enough sweetness (caramel, \u003cstrong\u003etoasted marshmallows\u003c\/strong\u003e) to balance the burnt sticks, coal embers, \u003cstrong\u003ecough mixture, Mescal\u003c\/strong\u003e and nutty smoke – \u003cstrong\u003eyoung, muscular and untamed\u003c\/strong\u003e. On the reduced nose, shadows of foamy bananas, flaky pastry and \u003cstrong\u003eteriyaki pork\u003c\/strong\u003e danced behind the black gauze curtains of \u003cstrong\u003esmoke, wet dog and old wellies \u003c\/strong\u003e(spell-check alert!).
