We found sweetness in abundance on the palate yet, at the same time, a surprising amount of smoke which made us think of cinnamon-toasted brioche with a dollop of honeyed ricotta and served with peat-smoked roasted plums. Water added whole grilled sardines smoked in rosemary and thyme while, to taste, a slice of stone-baked pizza with capers and olives. At seven years of age, we combined selected hogsheads from the same distillery into a variety of different casks to develop further.
