The nose displayed custard Danish, lemon curd, toffee and perfumed pear, hints of heathery smoke and a suspicion of seared scallops. The palate started fresh and lively, but settled down to honeyed viscosity, ice-lolly sticks and toffee apples. Smoked spiced nuts appeared on the lingering finish. The reduced nose turned more maritime – reminding us of emerging from the surf with fresh, salty skin tingles.
