The panel didn’t catch the smoke right away, but it soon become evident – smoked pork, kippers, smouldering peats and beach bonfires. Otherwise, the nose gave us the sweetness of toffee, marzipan, raisins and manuka honey; some nuttiness; dried seaweed and whelk saltiness and just a hint of something industrial, like a mechanic’s oily rags.
