Sweet smoke on the palate neat, like a ham and haddie pie - bacon and smoked haddock. Water added the salty sea scent of Tatties ‘n’ Herrin (salt herrings and potatoes) and by then we were all sitting around the fire attentively listening to stories from the Orkneyinga Saga.
