The palate was hot and sharp – charred sticks, ash and smoke from a costal croft; char-grilled tuna and sweet and sour duck on the menu. The reduced nose had roasted chestnuts and dark chocolate Brazils, singed orange peel, burning straw and honey-glazed barbecued pork.
