The palate suggested \u003cstrong\u003ebaked pastries\u003c\/strong\u003e – and a classic sweet\/smoke combination – \u003cstrong\u003eburnt sticks\u003c\/strong\u003e, tar and light peat, balancing \u003cstrong\u003eintense honey\u003c\/strong\u003e and candies; \u003cstrong\u003ecitrus and liquorice \u003c\/strong\u003eto finish. The reduced nose made one panellist nostalgic – for the south of France –\u003cstrong\u003esunflowers on a table\u003c\/strong\u003e, gooseberries and citrus fruits in a basket and geckos on a \u003cstrong\u003esun-warmed wall\u003c\/strong\u003e – we gave him hugs. The palate – provided \u003cstrong\u003ebalance, interest and promise\u003c\/strong\u003e – coastal bonfires at sundown.
