The palate had controlled, muscular liveliness – a ballet dancer, not a whirling Dervish – juicy, fruitful flavours of kirsch, lemon Pana cotta, green apple and orange oil. The reduced nose, with orange blossom and jasmine, orange sorbet, dates and figs, was April in Seville.
