Then came handfuls of dried banana chips, white grapes and sliced apple topped with soft buttery toffee and runny caramel sauce. With a dash of water we took things to a new level with red apple pie stacked on sponge cake and covered with chocolate shavings and sticky honey. A scattering of dried herbs, fennel and star anise followed along with juniper berries to give an oily texture and a thick wedge of marzipan just for fun.
