The palate initially carried a punchy weight abundant with chillies and hot charcoals but cooled with menthol and peppermint as sweetness emerged. With water a more settled appeal was found as the smoke from beach bonfires bonded to salted liquorice and pine nuts darkened over a flame. Smoked kippers were served with teriyaki sauce whilst the palate became creamy like burnt milk with oysters.
