We also got a savoury, meaty layer and the heat of ginger, pepper and clove. The reduced nose – aniseed mouthwash, driftwood bonfires and a confectionery stall near rock-pools. The reduced palate – liquorice, Tiger Balm, salted caramel and smoke. Thumbs up all round but one or two panellists went completely crazy for it.
