On the palate we were reminded of a common Levantine drink, as we enjoyed a smoked sage-infused black tea – yes, the smoke is an added Scottish twist! Following reduction, the scent of smoked mango with lime and coconut appeared next to cracked black pepper and chipotle chocolate chilli.
