The palate wasn’t far away in terms of colour tones – brown sauce, earthy smoke, seared scallops, kippers fresh from the smoke-house and molasses. Adding water we nosed a pile of lobster creels on the harbour, a bonfire of wooden pallets (or freshly charred cask staves), waxed lemons, putty and magic balloons.
